Here is the version I made today!

You’ll Need

3 heads of broccoli
3 sweet potatoes
1 red onion
1 can of coconut milk
1 tablespoon butter, non dairy butter or coconut oil
1 tablespoon turmeric
1 tablespoon crushed red pepper flakes
2 teaspoons of sea salt

 

Now What

Wash and chop your veggies
Add butter to large saucepan over medium heat
Drop in chopped onions
Drop in chopped potatoes and broccoli
Pour water in just enough to almost cover the veggies
Add spices, stir and cover. Let cook for 20 minutes or until veggies are tender
Add coconut milk. Let simmer for 10 minutes
