Hope you are having a great day so far! So as you guys know, I’m super into cooking and preparing healthy foods. One of the biggest benefits of regular yoga practice (easy going yoga practice) is the strong and healthy connection between your mind and body. Your system actually rewires itself to slip into a cycle of desiring behaviors that are great for you …aka eating healthy, gravitating toward nourishing relationships, and improving self awareness.

So all of that practice on the mat should naturally overhaul our diets, without us having to have such a forced change. Exchanging potato chips for carrots and hummus is a side affect of al those down dogs. Watch out! You may just get more radiant than you are ready for!

More great news is eating well doesn’t mean you have to be on a diet! I’m talking about more of a slow overhaul of how we live and how we eat than any off balance calorie restriction and deprivation programs. You make the rules and you decide how you feel.

I present to you, a healthy, delicious, plant baed Mac & Cheese you’re going to love rotating into your several times a month go-t0 dish. One thing I love about this dish, besides that it is fun and easy to make, and all the ingredients are so clean and fresh, is that you can mix out the past with all kinds of fun substitutes to keep this recipe fresh in your house. Spagetti squash, mung bean pasta, and any gluten free pasta are all great options that totally transform this dish! Enjoy!

1 spagetti squash

1 cup cashews

2 cups mushrooms

1/4 cup nutritional yeast

1 table spoon Dijon

Crushed red pepper flakes

Curry powder

Now What

Toss whole squash into oven at 350 roast for 30 minutes

Prepare sauce

Cashews, Dijon, Water & Spices in Vitamix – Vitamix it up

Cut open squash and fork out “spagetti”

Cut mushrooms

Combine spagetti, mushrooms and sauce

Bake in glass dish for 25 minutes at 350
