One of my favorite simple, quick, & healthy dinners!
You’ll need
2 cups wild rice (prepared before hand)
1 red organic pepper
1 jar organic curry (dairy free)
2 handfuls organic kale
1/2 fresh lemon
Now What
Steam kale
In cast iron skillet combine wild rice, curry, and chopped pepper
Add kale and stir
Squeeze lemon and stir
Enjoy!

This looks delicious. What’s even better is I just happen to have all the ingredients on hand.
