This yummy and uber healthy dinner takes about 10 minutes to make and leaves you feeling great for the whole evening. This was kind of a wacky idea that turned out super great! You'll Need A few big slices of pineapple 1 cup rice (cooked) 2 tablespoons coconut milk 2 tablespoons balsamic vinegar 1 teaspoon sea salt 1 tablespoon earth balance Now What Prepare rice and set aside Slice pineapple, rub balsamic and salt on both sides, broil in oven for 5-10 minutes on each side. Just whipped this up with what was left in my kitchen. Came out so yum.
