Just home from a fun day being back in NYC. Had Green Dream with orange juice instead of almond milk plus some added ginger for a pre-dinner snack and coconut ice cream for dessert. Cooking this soup was the perfect activity to wind down and ground back into my non-travel routine. Try it out and let me know how you feel!

You’ll Need

Udon

1/2 red onion

1/2” fresh ginger

3 stalks kale

1 cup coconut milk

1 teaspoon curry powder

1 teaspoon red pepper flakes

1/2 tablespoon dijon

3 shakes hot sauce

Now What

Prepare Udon

Chop and simmer onion over olive oil in medium sauce pan

add 3 cups water

add spices and kale

add ginger

bring to boil and then lower to simmer for 10 minutes

add cooked udon

add coconut milk

add dijon

simmer 5 minutes

Remove from heat and enjoy!
